We owe our modern translation of barbeque to the German and Czech immigrants of the mid-1800s, although Native Americans, Spanish, Mexicans, and African Americans also practiced different styles of barbeque. These German and Czech settlers opened meat markets throughout Central Texas where the butchers would smoke the leftover meat to keep it from spoiling. 

These leftovers soon become very popular, although they were first known as a poor man’s dish. Original barbeque lovers would eat their meat with crackers, pickles, onions, and jalapenos.
